Editor's Notes
April 09, 2020:
Over concerns about long-term durability, we've opted to remove the Hiware Springform and the Baker's Secret Signature Square at this time. Those who need a springform choice might consider instead the Wilton Excelle Elite. A 9-inch model, it resists the leakage common to these types of pans fairly well, although not entirely, and it is dishwasher-safe for those who hate cleaning their pans by hand.
If you're looking for a more traditional round cake pan, there's the USA Pan Bakeware Round or the Chicago Metallic Professional. They're sized to create cakes that will fit most common cake carriers or cake stands, and both are coated with a silicone non-stick coating that's safe and free of nasty chemicals. This is also true of the Nordic Ware Heavyweight, a great choice for those making angel food or bundt cakes.
Many bakers turn to square pans, as well, which is why we've kept both the Nordic Ware Natural Aluminum and the Norpro Square. The former has a handy lid, although this can feel just a bit loose; you'll want to handle this model with care during transport. The Norpro pan doesn't have a lid, but it sports a shiny mirror finish that's both attractive and durable. It's also quite reasonably priced.
